Fish Eye Snack Recipe

Serve up a tray of creepy….and cool…fish eye snacks!

Here’s the perfect end-of-summer snack to bring that Labor Day weekend BBQ! These fish eye snacks are light and easy! You can use fresh mozzarella instead of bread if you want to go low-carb, too!

Fish Eye Snacks Recipe

Ingredients:

  • 1 baguette (or use fresh mozzarella), sliced into ovals
  • Smoked salmon (or any type of deli-sliced smoked meat)
  • Cream cheese (softened)
  • Green olives (pitted)
  • Black olives (pitted)
  • Olive oil (optional, for brushing bread)

Instructions:

  1. Prepare the bread base
    • Slice the baguette into thin pieces (or fresh mozzarella)
    • Lightly toast bread in the oven until golden and crispy. Optionally brush with olive oil for extra flavor.
  2. Spread the base
    • Spread a layer of cream cheese over each slice of toasted bread or fresh mozzarella. This will be the “white of the eye.” (cream cheese helps hold everything in place even if on mozzarella)
  3. Add the salmon
    • Layer your smoked salmon around the eyeball. (If this is for Halloween, you can make it look fleshy.)
  4. Create the eyeball
    • Cut the green olives into slices (these will be the iris).
    • Place one slice in the center of the bread.
    • Add half of a black olive inside the green olive hole to act as the pupil.
  5. Assemble
    • Adjust the salmon around the eyes to make the eye shape realistic.

Make It Scary

This is also perfect for Halloween parties or horror-themed gatherings, too! You could also drizzle a tiny bit of beet juice around for a “bloodshot eye” effect.
