The Ingredients

  • 1/2 lb Yukon gold potatoes (cubed)
  • 1 green bell pepper & 1 yellow onion (diced)
  • 1/4 lb maple sausage links
  • 6 eggs + 1 cup shredded cheddar cheese
  • Oil, salt, green onions, and hot sauce.

The 4-Step Execution

  1. Crisp the Potatoes: Sauté cubed potatoes in 1 tbsp of oil for 10–15 minutes until golden.
  2. Sauté the Veggies & Meat: Add another tbsp of oil, the peppers, onions, and salt. Sauté until soft, then add the sausage and brown.
  3. The Egg Vortex: Push the mixture to the outer edges of the skillet. Pour the beaten eggs and cheddar into the center, scrambling until set.
  4. The Fold: Toss the outer ring of veggies and sausage back into the eggs.
