Braised black bear paw is one of those dishes that lives somewhere between curiosity, tradition, and pure “wait, people eat that?” It is boiled, cleaned, pressure-cooked, then slowly simmered in vegetable stock with vinegar and honey—and it comes with a serious price tag to match (PRICE: ¥174,420 JPY / $1,113 USD)

If you’re brave enough to try it, there is no cutting corners here, as bear meat has to be cooked thoroughly for safety, and sourcing matters just as much as preparation. Some foods just carry a lot more story, responsibility, and controversy than others.
